Food Dehydrator
So I bought a food dehydrator yesterday. I am currently marinating my first batch of beef jerkey. Will put it on tonight, takes 12 hours to dry but hopefully it will be great. Will let everyone know!
The marinade smelt so good tho, I found the recipe on a whirlpool forum. It was:
Use Top Side beef. 2 Kg.
Part freeze to make slicing easier.
After removing most visible fat, slice into fingers approx 8 mm x 20 mm x whatever.
Combine half cup light soy sauce, half cup *Nuoc Mam, half cup Worcestershire sauce, large dollop honey, 5 garlic cloves, five fiery hot small chilli peppers, a small onion and a knob of ginger in a blender.
Marinade your meat in this for 12 to 24 hours in the refrigerator, remixing once or twice in that time.
Drain and load in dehydrator ensuring there are small gaps between pieces.
Run on high setting rotating the top tray to the bottom every hour or so.
Run until meat is changed colour inside and has a similar consistency to shoe leather. i.e when cooled will bend but not snap and cannot be easily compressed between the fingers. approx 12 to 14 hours but check every hour
*Vietnamese Fish sauce. Any supermarket Asian section.
The chilli is optional. Use black pepper for a milder taste.

Last Friday night brad came over and we drank a case of beer. At approximately 1am the beef jerkey was ready. We ate so much it was amazing!
Pretty sure it dried up all the beer cause no hangover in the morning! We were drinking The original budweiser beer called budvar... It was great!

I have to admit, the deep fryer sure came in handy when hungover!
