It all depends on whether you are buying it second hand, what brand it is and also the store. Where I was at I think they were selling second hand skis for about $300. It is just a lot easier to hire the gear though at the ski fields if you are not planning on skiing for ages.

It isn't all about skiing and snowboarding though, there are tons of other adventurous and scenic activities you can do - including quad biking, jet boating, bungjy jumping, skydiving. Also climbing glaciers, scenic flights, rafting into glow worm caves.

If you do go to New Zealand for a holidays, hire a motorhome and experience the scenery and camp out in the wilderness Make sure you bring a good camera!
